Beim Tag des Salzes können Besucher erleben, wie aus echter Haller Sole in einer nachgebauten Siedepfanne beim Haalbrunnen auf dem Haalplatz von 11 bis 17 Uhr mit viel Rauch und Feuer richtiges Salz entsteht, das »Weiße Gold des Mittelalters«. Auch Münzprägen wird vorgeführt. Darüber hinaus werden viele interessante Programmhiglights geboten. Um 11 Uhr wird ein kleiner musikalischer Streifzug durch Schwäbisch Hall mit Haalgschrey angeboten. Treffpunkt ist der Marktplatz. Zur selben Uhrzeit findet auch die öffentliche Stadtführung »Mit einem Sieder durch die Stadt« statt. Die Führung dauert 90 Minuten, Treffpunkt ist die Tourist Information (Hafenmarkt 3), die Führung endet am Haalplatz. Um 11.30 Uhr werden mittelalterliche Spielszenen und Musik von Haalunkel und Haalgschrey geboten und um 13 Uhr tritt außerdem der Kleine Siedershof auf. Um 13.15 Uhr wird erneut die Führung »Mit einem Sieder durch die Stadt« angeboten.
Um 14 Uhr öffnet das Haalamt. Bis 16 Uhr werden Einblicke und Informationen zum historischen Gebäude und der Verwaltungs- und Verteilungsstelle der einmaligen und historischen Siedensrenten seit dem Jahre 1827 geboten. Parallel dazu werden ab 14 Uhr mittelalterliche Spielszenen von Haalunkel gezeigt, untermalt durch die Musik von Haal-gschrey. Um 14.30 Uhr können Interessierte an der öffentlichen Führung »Der Hällische Salz- und Seegens-Bronn« in der Salzabteilung des Hällisch-Fränkischen Museums teilnehmen. Um 15 Uhr findet schließlich der Auftritt des Großen Siedershofes statt. Auf dem Haalplatz bieten diverse Stände ihre Waren an, darunter das Steine-Sammelsurium, Lederhobby Elbel und die Assamstadter Salzgrotte und Salzshop sowie die Seifensiederei Seitz. Bianca Kugler verkauft selbstgemachte Bortaufstriche und Pflegeprodukte, Lena Denz selbstgemachten Schmuck und Deko-Gegenstände.
Auch für das leibliche Wohl ist gesorgt, die Bewirtung übernimmt die Bäckerei Renner und der Biergarten.
So wurde früher Salz gesotten
Die Sole gelangte vom Haalbrunnen über Holzrinnen in den Kasten, ein Solebehälter an der Außenwand des Haalhauses. Von hier aus lief die Sole durch ein Sieb in den Naach, ein durch die Wand mit dem Kasten verbundenen Holztrog. Hier fügten die Sieder der Brunnensole Gewöhrd aus der Gewöhrdstadt zu. Das Gewöhrd bestand aus salzüberkrustetem und salzdurchtränktem Material, wie zerklopftes salzhaltiges Mauerwerk von abgebrochenen Siedeherden, Pfannsteinen oder Tonstücken, die durch ihre poröse Struktur der Sole Wasser entzogen. Durch enorme Hitze in den Haalhäusern verdampfte schon ein Teil des Wassers. Dadurch erhöhte sich die Salzkonzentration, die Sole wurde gradiert. Anschließend kam die konzentrierte Sole in die schiffsförmigen, normierten Siedepfannen. Diese standen auf einem gemauerten Herd. Beim Siedevorgang wurde zunächst langsam angeheizt, dann bei starkem Feuer scharf aufgekocht, wobei sich schmutziger Schaum bildete, der abgeschöpft wurde. Nach dem Ausschwenken der Pfannen mit Rohsole schöpfte man die geläuterte Sole in die Pfannen zurück. Zur weiteren Läuterung setzte man schaumbindende Mittel ein. Nach und nach kristallisierte das Salz aus, welches man auf ein Brett am Pfannenrand schaufelte. Zum Trocknen kam das Salz nun ins Pfaunstle, eine längliche Grube in der glühende Holzkohle mit Sand abgedeckt wurde. Darüber formte man mit Brettern eine Salzmauer. Nach dem Trocknen des Salzes sägte man 16 gleich große Schilpen, die Handelseinheit des Haller Salzes. Diese kamen zum völligen Trocknen ins Löchle und wurden dann in Holzfässern auf Fuhrwerken zu den großen Salzmärkten nach Speyer, Frankfurt oder Straßburg transportiert.
